Moroccan Harira with Albaligha Harira is a traditional Moroccan soup of tomato, lentils, and chickpeas. Fragrantly seasoned with ginger, pepper, and cinnamon and gets additional flavor and body from a robust quantity of fresh herbs: cilantro, parsley, celery, and onion. It is typical in Morocco to serve something sweet along side the savory dishes. Albaligha is a lightly sweeten pastry that will accompany the soup.

Libyan Vegetable and Chicken Couscous Healthy and tasty vegetables are served over a beautifully steamed couscous with chicken. This main dish has the wonderful complex flavours that you expect from the Middle East spiced with  caraway, turmeric, galangal, ginger, cinnamon, cloves, nutmeg and chili.

Tajine A delicious side made with potatoes, ground beef, eggs, mozzarella and cheddar cheese flavoured with turmeric and parsley.

Arabic Salad A traditional Middle Eastern salad made of fresh tomato, cucumber, chopped greens and mint with a touch of lemon juice..

Desserts and A Tea Ceremony

Almaamoul A shortbread that is filled with minced dates. This small pastry melts in your mouth and is covered with intricate designs.A

Ghraiba This sweet is made with ghee and toasted sesame seeds and almonds. The shortbread cookie then has an almond placed on the top.

Baklava The taste of honey and almonds are embedded in this beautiful pastry.
